Easy No-Bake Muesli Bars

The easiest on-the-go snack with 6 healthy ingredients, these muesli bars are one to make on repeat. Salty, sweet, dipped in chocolate, just irresistible!

I threw these together on a random snack-craving whim one day, but now that I’m on batch number three in just a couple weeks I decided they must be shared. Chewy, chocolate dipped, made in just 10 minutes with 6 simple ingredients, these Easy No-Bake Muesli Bars are very much fridge staple stuff you will never want to be without.

No-Bake Muesli Bar Ingredients
These bars aren’t fancy – maple syrup or honey to sweeten, nut or seed butter to bind, a little salt, a little vanilla, cinnamon if you’re in the spiced mood – but what makes them fun is the endless variations you can easily make by switching up the variety of muesli you use. Consider it a little granola bar cheat, you don’t have to add your own nuts and seeds and dried fruits because the muesli does that for us.

The dark chocolate coating isn’t a necessity, but it certainly does add an extra delicious treat yo’self component I personally see no reason to skip. You could toss in a handful of chocolate chips instead.

Tips For The Perfect Muesli Bars
Toast the muesli. Not required, but it takes just 10 minutes and really boosts the cozy oat flavor. Spread the muesli on baking sheet and bake for 5 minutes, stir then 3-5 more minutes until golden and fragrant.
Pick a muesli with lots of mix-ins. My favorite muesli is from Seven Sundays, its full of pumpkin seeds, dried blueberries, dried apples, buckwheat, chia, coconut…so much yummy stuff.
Try using tahini. If you like the flavor of tahini, it pairs so deliciously with the dark chocolate.
Eat them cold, straight from the fridge or even freeze them. Maybe I’m weird, but I love the extra chewy chilly texture.

Ingredients
3/4 cup (185g) nut/seed butter
1/2 cup (160g) maple syrup or honey
2 1/2 cups (300g) of your favorite muesli
1 tsp vanilla extract
Pinch of salt
1/3 cup (60g) dark chocolate chips

Instructions
Melt nut/seed butter with the sweetener in the microwave or stovetop. Whisk until smooth. Stir in vanilla and salt.

In a large bowl, pour wet ingredients over the muesli and stir until evenly coated (you can toast the muesli first in the oven for 7-9 minutes at 350 until browned for extra flavor!)
Melt chocolate chips. Pour into the bottom of a 8×8” baking dish lined with parchment paper. Freeze 5-10 minutes until almost hard.
Top with the muesli mixture, pressing in firmly.
Refrigerate minimum 4 hours, then slice.
Store leftovers in the fridge for up to a week.
