INGREDIENTS
- 300 gm dark chocolate
- 100 gm milk chocolate
- 1 tsp coconut oil
- 50 gm white chocolate
- Pistachio Filling:
- 150 gm kunafa pastry, finely chopped and toasted until golden
- 75 gm pistachio paste, warmed until smooth
- 15 gm pistachio powder
- Pinch of salt
- Optional:
- Edible food colors to mix with the white chocolate
INSTRUCTIONS
- Prepare Pistachio Filling:
- Toast the finely chopped kunafa pastry over low heat until golden (about 3-5 minutes). Stir continuously to avoid burning. Transfer to a mixing bowl once done and set aside.
- Warm the pistachio paste until smooth if it’s firm. Add it to the toasted kunafa pastry along with pistachio powder and a pinch of salt. Mix well and set aside.
- Melt Chocolate:
- In a microwave-safe bowl, melt the milk and dark chocolate in 10-second intervals, stirring between each interval until smooth (about 1 minute total). Add coconut oil, stir, and set aside.
- Melt the white chocolate in another bowl. Optionally, divide it into smaller bowls and mix with edible food colors as desired.
- Assemble Bars:
- Dollop different colored white chocolate onto the base of the moulds.
- Pour melted dark chocolate over the white chocolate and spread evenly using the back of a spoon to cover the corners and surface completely. Use less chocolate to avoid excess.
- Fill each mould with the prepared pistachio filling, smoothing out the top evenly.
- Freeze and Serve:
- Cover the pistachio filling with more melted dark chocolate, ensuring an even layer. Scrape off excess chocolate.
- Place the moulds in the freezer to set for a few minutes.
- Remove from the freezer, demould the chocolate bars, and serve with coffee or after a meal.
NOTES
- Toast the kunafa pastry thoroughly to achieve the desired crunch.
- In hot climates, allow the first layer of chocolate to set briefly in the freezer before adding the filling and topping with more chocolate to ensure clean bars.
- Substitute other nut pastes for variation, although this may alter the recipe’s original appeal.
