Ingredients:
2 large ripe bananas (mashed)
1 cup rolled oats
½ cup almond flour
2 tablespoons chia seeds or flaxseeds
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon cinnamon
Pinch of salt
¼ cup honey or maple syrup
2 eggs (or flax eggs for vegan: 2 tbsp ground flax + 5 tbsp water)
¼ cup milk (dairy or almond milk)
1 teaspoon vanilla extract
Optional: chopped walnuts, sunflower seeds, or dried fruit for topping
Instructions:
Preheat your oven to 180°C (350°F). Line or grease a muffin tray.
In a bowl, mash bananas until smooth.
Add the eggs, honey/maple syrup, milk, and vanilla extract. Mix well.
Stir in the oats, almond flour, chia/flaxseeds, baking powder, baking soda, cinnamon, and salt until just combined.
Spoon batter into muffin cups (fill about ¾ full).
Top with extra oats, seeds, or nuts if desired.
Bake for 18–22 minutes, or until a toothpick comes out clean.
